Vegetable Pasta Sauce

Makes 3 cups of pasta sauce


  • 1 tsp. olive oil
  • one medium yellow onion, diced
  • 2 cloves garlic, minced
  • 20 baby carrots sliced
  • 10 mini peppers, diced
  • 2 tsps italian seasoning
  • 1 15 oz can tomato sauce
  • salt (or Jane’s Krazy Salt) & pepper (to taste)


  1. Saute onion in olive oil until translucent. Add in garlic until fragrant.
  2. Add in carrots and continue to cook until softened. Add a little water and place a lid on the pot to steam if carrots aren’t cooking through.
  3. Add in peppers and cook until softened.
  4. Add in italian seasoning and mix.
  5. Pour mix into blender and blend until smooth, adding water if mix is too thick to blend.
  6. Pour back into pot with remaining ingredients and simmer on low for 10 min or longer. Add water/chicken broth if sauce is too thick.
