Lentil and Brown Rice Taco "Meat"

Makes enough for three meals.

Ingredients

  • 1 cup green lentils
  • ½ cup brown rice
  • 1 onion, diced
  • 6 cloves garlic (minced)
  • 2 Tbsp. chili powder
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 2 tsp cumin
  • 4 ½ cup water (½ cup less if cooking in instant pot)

Directions

  1. Add lentils, brown rice, onion, and garlic to pot of instant pot or slow cooker.
  2. Add spices and water, stir well.

SLOW COOKER:

  1. Cook on high for 3-4 hours, stir filling once during the last hour. 3 hours for some bite, 4 hours for softer lentils.

INSTANT POT:

  1. Cook for 22 minutes with a natural release. Remember to use less water if using this method.

Leftovers can be kept in the refrigerator or frozen for up to 6 months.
