Thai Peanut Butter Chicken

Serves 4-6


  • 1-2 chicken breasts, cooked and shredded
  • 2 cups of rice, cooked OR pasta
  • 15 mini peppers, julienned


  • ¼ cup peanut butter
  • ¼ cup soy sauce
  • ½ cup water
  • 2 cloves garlic
  • pinch of ground ginger
  • 1 Tbsp brown sugar
  • splash of sesame oil (if desired)


  1. Saute peppers in a dry pot, just until they have some browned bits and are softened a bit.
  2. While peppers are cooking, mix sauce. Clumps of peanut butter are okay.
  3. Add in chicken and sauce into pot and stir, heat through until peanut butter has melted and food is heated through and coated.
  4. Serve over rice or pasta.
