Orange Chicken

Serves 4-6

  • 2 cups cooked rice
  • 2-3 small, cooked and shredded chicken breasts
  • vegetables (I used broccoli)
  • coleslaw (for serving)

  • juice and zest from three small naval oranges
  • 2 Tbsp brown sugar
  • 1 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • ¼ tsp ground ginger
  • ¼ tsp garlic powder
  • 1 Tbsp cornstarch (if desired)
  • water (as needed)

  1. Mix orange juice, zest, brown sugar in a large pot until heated through. If desired, add water to thin mixture.
  2. Mix in rice vinegar, soy sauce, ginger, and garlic powder and stir.
  3. Add shredded chicken (and any vegetables you would like) to sauce. Add in water to steam vegetables and heat chicken through.
  4. When vegetables and chicken are coated in sauce and vegetables are softened, add in cornstarch if desired to thicken the sauce – stirring continually.
  5. Once desired thickness is reached, serve on a bed of rice with coleslaw.
