One Pot Pasta with Turkey and Spinach

Serves 4-6


  • ½ pound of ground turkey
  • 1 tsp salt (can use up to 2 tsp)
  • 2 tsp ground cumin
  • 1 tsp oregano
  • ½ tsp ground pepper
  • 1 medium onion, diced
  • ½ cup bell pepper, diced (any color)
  • ¼ tsp garlic powder
  • 1 14 oz can diced tomatoes
  • 1 tsp chili powder
  • 16 oz (1 pound) pasta, any kind
  • 3 ½ cup chicken broth (or water)
  • ¼ cup sour cream or yogurt
  • fresh spinach or frozen spinach (to taste)
  • ½ shredded cheese (to taste)


  1. Brown ground turkey in salt, cumin, oregano, and pepper. Add onion, garlic, bell peppers, and cook until browned and veggies are soft.
  2. Add all remaining ingredients (except cream, cheese, and spinach). Cook in instant pot according to pasta box directions. Take the lowest amount of cooking time, divide it in half, then add one minute. Leave five minutes, then quick release.
  3. Stir in cream, cheese, and spinach. Put lid back on and let spinach wilt. Serve.

Can cook on stovetop, if needed.
