Mexican Street Corn

Makes 3 cups of Mexican Street Corn


  • 2 cans of corn, drained OR 3 cups of frozen corn, reheated
  • 1 Tbsp butter
  • salt (to taste)
  • 2 Tbsp sour cream
  • 1-2 Tbsp lemon or lime juice
  • 2 teaspoons chili powder
  • feta (or cotija) cheese (to taste)


Quick Prep

  1. Heat corn in microwave and mix in all remaining ingredients, except for feta cheese. Put on top before serving.

Longer Prep

  1. Heat corn in skillet over medium high heat for 8-10minutes.
  2. Remove from heat and stir in butter, salt, sour cream, lemon juice, and chili powder.
  3. Top with feta cheese. Serve immediately or serve cold later.
