Lemon Poppy Seed Muffins

Makes 12 muffins or 1 pound loaf

Ingredients

  • 1 ½ cup flour
  • ¾ tsp salt
  • ¾ tsp baking powder
  • 1 ½ Tbsp poppy seeds
  • 2 tsp lemon juice
  • ¼ oil
  • ¼ sour cream
  • 2 large eggs
  • ½ cup milk
  • ½ cup sugar
  • 1 tsp vanilla

GLAZE:

  • ⅛ cup orange juice (or water)
  • ½ tsp lemon juice
  • ½ tsp vanilla
  • 1 cup powdered sugar

Mix and drizzle over cooled muffins or loaf.

Directions

  1. Preheat the oven to 350°F.
  2. Mix wet ingredients together until well blended. Make sure there are no clumps of sour cream.
  3. Add in dry ingredients and mix well ensuring there are no clumps of baking powder.
  4. Pour into greased muffin tin (¼ cup batter per tin) or into greased loaf pan.Bake for 18-20 minutes for muffins or 45min - 1 hour for the loaf.
  5. Cool slightly and then pour glaze over. For extra moisture, poke holes in the muffins or loaf to let the glaze seep in.
  6. Serve immediately or can be kept in air tight container for up to 3 days.
