Ginger Cookies

Makes 4 dozen cookies

Ingredients

  • 4 ½ cups flour
  • 4 teaspoons ground ginger
  • 2 teaspoons baking soda
  • 1 ½ ground cinnamon
  • 1 teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup butter, melted
  • 1 cup white sugar
  • 2 eggs
  • ½ cup molasses
  • sugar to roll cookies (about ½ cup)

Directions

  1. Preheat the oven to 350°F.
  2. Mix sugar and butter in large bowl. Stir in eggs and molasses. Mix in dry ingredients, adding as much flour as you can and stirring.
  3. Shape dough into 1 inch balls by hand. Roll in sugar until completely coated.
  4. Place on parchment lined or greased baking sheet. Bake for 8-10 minutes. 8 minutes for chewy consistency, 10-12 minutes for ginger snap texture.
  5. Cool on pan 5 minutes and then move to wire rack.
  6. Store in air tight container or bag for up to 5 days.
