Egg Roll In a Bowl

Serves 4-6. Pairs well with rice.


  • 1 tsp olive oil
  • 2 cloves minced garlic
  • 1 small/medium onion, diced
  • 10-15 mushrooms, rinsed and diced (or can use ground turkey)
  • 16 oz coleslaw
  • ¼ cup (or to taste) soy sauce
  • ⅛ tsp ginger
  • sesame oil (optional)


  1. Cook onion until translucent, add garlic and cook until fragrant.
  2. Add in mushrooms and cook until soft. Add in soy sauce/water to keep from burning, mix in ginger as well.
  3. Add in coleslaw and cook until wilted, adding soy sauce as needed.
  4. Serve alone or with rice.
