Creamy Taco Soup

Serves 4-6

Ingredients

  • ½ ground turkey (optional)
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp salt
  • 1 tsp onion
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 2 cup milk, divided
  • 15 oz can black beans, rinsed and drained
  • 14.5 oz can diced tomatoes, undrained
  • 1 can whole kernel corn

Directions

  1. Brown ground turkey in salt and pepper (if using).
  2. Add spices and cook 1-2 minutes.
  3. Add butter, whisk in flour. Cook for 1-2 minutes until flour taste is gone.
  4. Slowly whisk in 1 cup milk.
  5. Add in black beans, tomatoes, corn, and milk. Simmer 5-10 minutes.

VEGAN OPTION:

  1. Melt butter in sauce pan. Whisk in flour and spices and cook 1-2 minutes.
  2. Slowly whisk in 1 cup milk.
  3. Add in black beans, tomatoes, corn, and milk. Simmer 5-10 minutes.

Serve with: shredded cheese, sour cream, tortilla chips, olives

Can be stored in the fridge for up to 5 days.
