Chocolate Baked Oatmeal

Makes 6 servings of oatmeal in a 7x11 pan


  • 2 cups of almond milk
  • ¼ cup brown sugar
  • ⅓ cup peanut butter
  • 1 tsp vanilla
  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 Tbsp flaxseed
  • pinch of salt
  • ⅓ cup chocolate chip


  1. Preheat the oven to 350°F.
  2. Add all wet ingredients to a bowl and mix. Then add in dry ingredients. Mix well, then fold in chocolate chips.
  3. Pour into 7x11 greased pan, bake for 35-40 minutes.
  4. Serve immediately or store in fridge and reheat before serving.

Serve with more milk to soften to oatmeal consistency, this is more of a cake/brownie consistency.
