Buttermilk Pancakes

Serves 2-3 people

Ingredients

  • 1 cup flour
  • 1 Tbsp sugar
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ salt
  • 1 large egg
  • 2 tbsp. oil
  • 1 cup buttermilk (or sour milk)
  • 1 tsp vanilla (optional)
  • 1 tsp cinnamon (optional)

Directions

  1. Mix dry ingredients in large bowl.
  2. Mix wet ingredients in a small bowl.
  3. Mix wet ingredients into dry ingredients until just combined.
  4. Cooked on greased skillet over medium heat until bubbles appear and stay on top. Approximately 2 minutes per side.

To make sour milk, add 1 Tbsp of vinegar or lemon juice to measuring cup, then pour milk in to 1 cup line. Let sit 5 minutes to sour.
