Banana Chocolate Chip Muffins

Makes 12 muffins


  • 1 ½ cup flour (can use whole wheat, plain, or a mix)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup brown sugar
  • 1 large egg
  • ⅔ cup milk (any kind)
  • 3 Tablespoons oil
  • 2 ripe bananas
  • ¼ cup chocolate chips (or any other mix in)


  1. Preheat the oven to 400°F.
  2. Mash banana in a large bowl. Mix in sugar, egg, milk, and oil. Mix in the dry ingredients but do not over mix. Fold in chocolate chips.
  3. Pour batter into greased or lined muffin tin (using ¼ cup to measure batter). Bake for 15-18 minutes.
  4. Cool in tin for 5-10 minutes and then let cool on wire rack completely.


Best eaten immediately or within 2 days, can be frozen if needed.
